Let's get right into my gluten-free, vegan food for the day...
5:00 AM: warm water with the juice from half a lemon |
5:30 AM Pre-workout snack: 2 slices Rudi's Multigrian Gluten-Free toast with organic strawberry jelly and Earth Balance vegan butter |
Workout: 1 hour of yoga with Bethenney Frankel's Body by Bethenny DVD
7:30 AM Breakfast: Chocolate Ice Cream Smoothie Raw cacao powder, hemp seeds, chia seeds, spinach, rice milk, frozen strawberries, and frozen bananas. |
9:15 AM: Peanut Butter Cookie Larabar |
10:15 AM: "Sneaky Spinach Pancakes" with organic maple syrup. |
11:15 3rd AM Snack: 1 banana |
12:15 PM Lunch: "Sneaky Spaghetti" with lentils, spinach, and peas on gluten-free brown rice noodles. |
2:15 PM: Green juice: 1/4 of a pineapple, 1/2 a lemon, 1 apple, 2 stalks of kale, 2 stalks of celery |

After getting home from work, I captured some of more of Brandon and Avery's "Daily Outdoor Adventures". Those two are too funny as they explore around outside, get the mail, say "Hi" to neighbors and look for animals.

Today's required clothing accessory hats! Avery always helps Brandon choose which hat to wear and now she has one of her own, which she likes to wear backwards in the style she calls: "Daddy hat".

Then we headed inside for some smoothie fun!
5:00 PM Pre-dinner snack: "Chocolate Vanilla Smoothie": 1/2 cup vanilla coconut milk, Chocolate Sun Warrior Rice Protein Powder, 1cup of spinach, 1 1/2 frozen bananas, 3 frozen strawberries |
7:30 PM Dinner: Burritos with black beans, homemade cilantro lime rice, grilled peppers and onions on corn tortillas. Don't forget that homemade guacamole too (the best part!). |

Dessert: "Naked Puppy Chow" |
Moving on to that recipe...I came up with the combo of chickpeas and chips from some other recipes floating around online, but some of them baked them. I found that this dried them out, I was probably just cooking them wrong or something, but I wanted them to be a bit more full of flavor and soft. So I combined some chickpeas, some BBQ sauce and warmed them in the microwave The end result was delicious and filling, the perfect combo to dip some chips into. As if that simple description wasn't easy enough, let's break it down a bit more.
BBQ Chickpeas & Chips
Makes 2 small servings (or 1 big serving)
Ingredients:
- 1 cup cooked chickpeas (aka garbanzo beans) I cook them using this method
- 1/2 cup BBQ sauce of your choice, I like "Three Little Pigs BBQ Sauce "Kansas City Sweet"
- chips, I like organic corn tortilla chips
1 cup of cooked chickpeas and 1/2 of BBQ sauce is all you need! |
1. Add 1/2 cup or more of the BBQ sauce to the chickpeas. |
2. Stir to combine and then microwave for 1-2 minutes |
3. Serve with chips and enjoy the delicious BBQ flavor! |
