What I Ate Wednesday

Hi green friends, foodie bloggers, and everyone in between! It's Wednesday, so you know what that means..."What I Ate Wednesday" time! This post is once again linked up to the blog, Peas & Crayons  and for the month of October we are sharing some Spooky Snacks & Healthy Halloween Treats!



Let's get right into my gluten-free, vegan food for the day...
5:00 AM: warm water with the juice
from half a lemon
5:20 AM Pre-workout snack: Sausage McMuffin
(aka Food for Life Gluten-Free English Muffin, 
with a Sol Veggie Breakfast Patty and some maple syrup) 

Workout: 1 hour on the treadmill, running intervals: run 2 minutes, walk 2 minutes...repeat. Simple enough, yet gets the calories burning! 


7:30 AM Breakfast: Chocolate Ice Cream Smoothie 
Raw cacao powder, hemp seeds, chia seeds, spinach, 
rice milk, frozen strawberries, and frozen bananas.

10:15 AM: "Sneaky Spinach Pancakes" with organic maple
syrup.
Pancakes! What a shocker! ( :

11:15 3rd AM Snack: 1 organic gala apple


12:15 PM Lunch:"Tofu Mushroom Stroganoff" a favorite
in this "green" house! Baked tofu with mushrooms, vegan
sour cream, and gluten-free noodles.

2:15 PM: Green juice: 1/3 of a pineapple, 1/2 a lemon,
1 apple, 2 stalks of kale, 2 stalks of celery
2:30 PM 2nd Afternoon Snack
Almond Dream Strawberry Yogurt

3:00 PM Afternoon Snack #2: Way Better Simply Sprouted 
Sweet Chili Tortilla Chips (taste like Doritos but healthy)

5:00 PM Pre-dinner snack:
"Chocolate Vanilla Smoothie": 1/2 cup vanilla
coconut milk, Chocolate Sun Warrior Rice Protein Powder,
1cup of spinach, 1 1/2 frozen bananas, 3 frozen strawberries

7:00 PM Dinner: Taco Veggie Mix Burritos (with homemade 
cilantro rice) on a gluten-free tortilla shell.



The burrito filling is part veggie ("Taco Veggie Mix" from 
The Edible Perspective) and part rice (my homemade rice
that consists of long grain brown rice, fresh cilantro, 
lime juice, and sea salt).
Avery hasn't been a big fan of this meal in the past, but things were different this time around (gotta love the always changing taste buds of a toddler!).

"Veggie Burritos? I love Veggie Burritos!"
 Why did she love them so much? That's because of one special thing her Daddy added...SALSA!

"Yep, keep it coming Dad!"

She loved dipping her chips and sometimes hand into
the salsa and saying the word salsa,
(or as Avery says it: "sha sha").

She must be part monkey or something because
she always likes her little toes to grip on to the table,
just lovely manners right?! ( :

Easiest Halloween treat for me...a handful of gluten-free, vegan chocolate chips. Hits the spot every time...
