What I Ate Wednesday

My summer "What I Ate Wednesdays" with Avery are winding down as my time to return to teaching gets closer and closer. So here we are living it up one more summer day, eating yummy food, doing lots of swinging, and of course going to the pool! Check out the fun we had...


5:00 AM: glass of warm water with
the juice of half of a lemon

5:30 AM Pre-workout snack: 1 Udi's Gluten-Free Blueberry
Muffin  My new favorite GF product! Wish it didn't have eggs,
but that's the trouble I run into a lot with trying to
 find gluten-free and vegan foods.

Workout: 1 hour of yoga with 2 episodes of Namaste Yoga.

Then once Avery woke up she wanted to do her favorite thing...go swinging outside! She calls it "la la" because when she swings she likes to sing, "La la, la la..." So "La la-ing" we went.
You must be in the swing next to her...
she does not like to swing alone!

I think it's safe to say I'd do anything for that smile...

8:30 AM Breakfast: Chocolate Ice Cream Smoothie
Raw cacao powder, hemp seeds, chia seeds, spinach,
rice milk, frozen strawberries, and frozen bananas.

Avery's breakfast: small bowl of organic strawberries

Strawberry time!

9:30 AM: Peanut Butter Chocolate Chip Larabar

10:30 2nd Morning Snack: Sausage McMuffin
(aka Food for Life Gluten-Free English Muffin,
with a Sol Veggie Breakfast Patty and some maple agave nectar.)

12:00 PM Lunch: "Tofu Mushroom Stroganoff" with mushrooms,
tofu, and vegan sour cream over Tinkyada
rice noodles. A huge hit at our house!

Did someone say tofu?

Then we had a visitor...Grandma Karen, or "Na Na" to Avery, (my mom and fellow teacher who is also on summer break!). They played peek-a-poo and read lots of books. We love Na Na Time!

2:00 PM 1st Afternoon Snack: 1 organic apple

2:30 PM 2nd Afternoon Snack: Almond Dream Strawberry Yogurt

4:30 PM 3rd Afternoon Snack: My
" Grape Juice Green Smoothie"

Then after a long day at home, we were ready to head to the pool!

Pool time!

She's pretty fearless in the water with her floatie vest on.

fountain...but this is about as close as
she'll get to it.

6:00 PM Green Juice: Apple Juice and
Amazing Grass Green SuperFood Powder

6:45 PM Post-pool snack: Bowl of Veggie Straws!
Then it was time for a Chipotle-inspired dinner...

7:30 PM Dinner: Burritos with black beans, homemade cilantro
lime rice, grilled peppers and onions on corn tortillas. Don't
forget that homemade guacamole too (the best part!).

Avery's a guac fan too...when she's not throwing it off her tray.

Dessert: 2 Gluten-free, vegan cookies from Cinnamon Quill.
To make them sugar-free, I used xylitol.
