What I Ate Wednesday

Hey greenies! Well today marks the last summer vacation "What I Ate Wednesday" for me since I went back to work today (I'm a special ed preschool teacher).  The food and fun you'll see in today's post is actually from Monday, when I was still living it up on my summer break with Avery. Check out the fun we had sleeping in, cooking, and playing all day.



7:30 AM Just woke up (ahhh, sleeping in...I miss you already!)
Warm water with the juice from half a lemon.

8:00 Breakfast: "Chocolate Ice Cream Smoothie" with
rice milk, spinach, raw cacao powder, chia seeds, hemp
seeds, frozen bananas, and frozen strawberries.
Avery shared with me and had this for breakfast too.

Then Avery joined me in her new favorite spot...on the counter, and helped me make some blueberry muffins.  I had been getting some gluten-free muffins from the store, but for $5-6 for just 4 muffins, I knew I could save a bit of money and just make them myself.  Don't worry, I always stay close by when she's on the counter (except for when I'm snapping a few pics of her!). Plus the corner of our counter helps pin her in a little more.

That's one great thing about vegan baking...you can
always lick the spoon since there are no eggs!

I think I found a cooking buddy.
The recipe I used was from Gluten-Free Goddess and is called, "Gluten-Free Vegan Blueberry Muffins".  As usual with my baking, the muffins came out looking quite different than the ones shown in the recipe, but despite their "rocky tops" they tasted delicious.


Even better, I ended up with 12 muffins, most of which I froze and will be reheating for snacks now that I'm back at work.  "Baking bloggers"...any suggestions as to how I can keep the tops from looking rocky?


9:45: AM Snack: Then we had to taste them of course! ( :

Workout: 1 hour of yoga Shiva Rea Yoga Shakti  You've got to watch the preview of this video! Do you see how peaceful the background of the video is? I love doing this DVD because of this awesome scenery. I often imagine I was there...even though I'm just on my good ol' yoga mat in my basement.



12:00 Lunch: "Oven Roasted Veggies & Penne Pasta" from
the blog The Way...with mushrooms, tomatoes, zucchini,
green peppers, and chickpeas all mixed up with a marinara sauce
and gluten-free noodles.

1:30PM: "Green Juice" (apple juice + green powder)

2:00 PM 1st Afternoon Snack: "Berry Bowl" with organic
strawberries and blueberries sweetened with a little xylitol,
a plant-based sweetener.

3:00 PM 2nd Afternoon Snack: 2 slices of Rudi's Multigrain
Gluten-Free bread with Earth Balance vegan butter and
honey.

4:30 3rd Afternoon snack:
"Green Strawberry Lemonade Smoothie"
with spinach, lemonade, lemon juice,
frozen strawberries, frozen bananas,
and chia seeds.


Meanwhile, Avery hung out...or hung on, to her new best friend:
our dog Jilly!


7:00 PM Dinner: "Chickpea and Sweet Potato Stew" . I love
the flavors in this! Cumin, cinnamon, and turmeric...who
knew they could taste so good together?

Avery was all about this stew...funny face and all.

Her favorite part is the chickpeas...which if you remember
we had for lunch. What can I say, they are my new
favorite summer staple!

Who knew a spoon could be so much fun? ( :
