What I Ate Wednesday

Happy Wednesday to you all. WIAW is back in effect this week and we're going green with it. With that in mind, let's get right into my food for the day:






5:00 AM Just woke up snack: Food For Life Gluten-Free
 English Muffin, Earth Balance butter, and honey.


Workout: 1 hour yoga with Bethenny's Skinny Girl Workout DVD.  Such a great workout. Love it.




7:30 AM Breakfast: Chocolate Ice Cream Smoothie
This may not look green, but it is! 2 handfulls of
spinach are hidden in some yummy chocolate goodness!


9:20 AM 1st Morning Snack: Peanut Butter Chocolate Chip Larabar.
Seriously tastes like a Snickers!
10:20 AM 2nd  Morning Snack: 2 gluten-free, vegan pancakes
from The Cinnamon Quill blog, with Maple Agave Nectar
as my syrup. Boy do I love pancakes...especially this recipe!

11:30 AM 3rd Morning Snack: 1 organic orange


12:30 PM Lunch: "Bean and Quinoa Chili" that combines
black beans, red beans, green and red peppers, tomato sauce,
onions, carrots, and one funny sounding grain: quinoa.
Delicious!

It is especially good with corn tortilla chips!

Dessert: "Genuis Chocolate Chip Blondies"
from Chocolate-Covered Katie.
I love sneaky dessert recipes, you know the ones that taste like dessert, but are actually good for you? These blondies fit the bill because they made of....chickpeas! Ha ha! I love them, they taste just like a cookie bar to me!

2:15 PM 1st Afternoon Snack: 1 organic Gala apple

3:15 PM 2nd Afternoon Snack: Creamy Chipotle Butternut Dip

I love this dip because it combines two of my favorite
things right now: butternut sqash and chipotle powder. (  :

5:30 PM Just got home/playing with Avery snack:
Peachy Kale Smoothie
One of my favorite ways to get in some greens is with this kale smoothie.  Suprisingly, this is one of Avery's favorite smoothies too. For our smoothie time together on this day we headed outside to enjoy the warmer-than-usual weather.

"Did you say outside? What?"

"Oh yeah, smoothie time."


Love those chubby little hands and wrists.

Who knew smoothies and outside time could be so much fun?

Almost too much fun!  ( :


Time to head back in for dinner.


Now I just have to share this cool contraption I recently bought...it's a Kitchen Art Scrap Trap. $8 people, $8 is all it took to put a smile on my face when I used it for the first time! I don't know about you, but my trash can is halfway across the kitchen from where I ususally stand to chop things, so disposing of all the scraps is such a pain. Usually I chop things, and throw them in the sink or in a pile on the counter and then I have to balance and carry them all the way to the trash can.  Unfortunately, most of it usaully ends up on the floor, which is cool if you're my dogs (or Avery), but if you like clean floors, you will go crazy.

My new Kitchen Art Scrap Trap in action.

Enter: Kitchen Art Scrap Trap. All you have to do is hook it onto a drawer beneath your counter where you chop things and as you have scraps, you slide them into the container (or "trap"). When I'm done chopping, I unhook it from the drawer and dump the contents into the trash can.  Ahhh....I just love this thing. It makes my veggie, choppin' life so much easier.




7:00 PM Dinner: "Better Spaghetti Sauce From a Jar" from
Peas & Thank You with gluten-free rice noodles.
Now I've blogged before about one of my favorite meatless meat sauces to put on spaghetti that used TVP (also called textured vegetable protein). But I ventured into new waters with this meal and tried something new and scary...tempeh. Ever heard of it? It's basically fermented soy beans with rice. Sounds so appetizing right?

But really, when cooked properly as Mama Pea instructs, it can take on the texture of ground beef. In this sauce you saute the tempeh with some onions, nutrtional yeast, and other Italian spices and then simmer it with the spaghetti sauce. It took on an awesome home-cooked flavor that was a hit with the whole family over at this "green" house. I can guarntee we will be having it again soon.

If you've never had tempeh before, this is the recipe to try it out with! You can do it, be brave! Avery will encourage you....
