WIAW and the Skateboarding Baby

Well this What I Ate Wednesday was extra fun since Brandon was home to enjoy it with Avery and I. So aside from some yummy vegan food that night, you can bet some skateboarding definitely took place. For those of you new to my blog, my husband owns a skateboard shop, so skateboarding is a pretty big part of our lives. In case you're wondering- no, I do not skate...it's all him...and maybe in the future, Avery. LOL.  I'll talk more about this "skateboarding baby" later. Until then, let's get right to this nursing-mama's gluten-free, vegan eats for the day:


Just woke up: 2 slices of Rudi's Multigrain bread with
Earth Balance butter and organic strawberry jelly.

Workout: 1 hour of pilates with 10 Minute Solutions Pilates Perfect Body DVD.  Just added this one to my "Exercise DVD Library" and it rocks. I was sore for a few days after I tried it for the first time. I'd highly recommend it.



Breakfast: Chocolate Ice Cream Smoothie.
It may not look mean and green, but this
thing is packed full of greens and awesome
nutrients. Did I mention it tastes like
chocolate ice cream?(  :

 
Morning snack...that I'm getting in the habit of having on
nearly a daily basis...Gluten-free, vegan pancakes from
Cinnamon Quill with Maple Agave Nectar as my syrup,
and a "shot" of orange juice to drink.
Does anyone else eat the same foods at the same time day after day like this? Or am I just crazy? ( :

2nd morning snack: 1 banana

Lunch: "Pressure Cooker Vegan Stoup (stew +soup)" from
Brittany @ A Healthy Sliced of Life.
Full of sweet potatoes, green beans, lentils, carrots, onions, tomatoes, and celery, this "stoup" was delicious, warming, and filling! Plus it made leftovers for days- score!

Dessert: "Chocolate Mousse Frosting" from Chocolate-Covered Katie.
Wondering what those little "crumbs" are in the mousse? I tried to melt a tablespoon or two of chocolate chips into the mix, but they didn't quite melt. No biggie...I like the little crumbs of chocolate!

Afternoon snack #1: organic orange

 my new favorite are: "Simply Sprouted
Way Better Snacks: Simply So Sweet Chili Tortilla Chips"
These chips rock! They remind me of Doritos from back in the day...only now they taste better and are better for you! These chips have sprouted whole grains and seeds in them like sprouted broccoli seeds, sprouted quinoa, and even sprouted daikon radish seeds. Whoa baby...and they taste like Doritos? Yeah, let's just say I buy 2 bags a week of these yummy things!

Now usually it's just Avery and I hanging out in the evening before dinner, but tonight Brandon was home. This meant she had someone to play with while I got stuff done!

It also meant that Avery got to play with her favorite toy...Dad's skateboard!

They went for many rides around the kitchen and living room.
That's one serious, sitting, skater girl.

With all this skateboarding fun, I was left to do one thing...cook dinner. I didn't mind one bit. It was great to have his help and Avery sure loved it. Cooking without stopping is kind of a nice thing too!

Dinner: "Naughty & Nice Vegan Enchilada Casserole" from
Angela @ Oh She Glows
Black beans, peppers, onions and a homemade enchilada sauce come together in this yummy casserole.  Now despite having a bit of a kick, this is one of Avery's favorite meals! She eats up those noodles faster than we can get them to her!

Now Avery sure has a blast making a mess at dinner, but cleaning up...well that's definitely not the highlight of my evening! The worst part is that she hates to have her hands and face cleaned.  She will fuss, and scream, and fight you every bit of the way. 

My solution: hold her over the sink and let her watch the water while you clean her. This works every time! She's so mesmerized by the water that she doesn't seem to mind me scrubbing away at her hands, arms, and face.  Well, she probably knows what I'm doing, but at least she tolerates it more.
